Flatbread Pizzas

I like simple easy recipes. Especially healthy, simple, easy recipes. If there’s a recipe with too many ingredients, a long list of steps and time-consuming prep, chances are I just don’t try it. This goes hand in hand with kids. Having to come up with what to make for dinner 7 nights a week is not an easy task. And when it’s always homemade and as healthy and nutritious as possible, it’s even harder.

Flatbread Pizza

This flatbread pizza has been my go-to meal on busy nights where I have to make something fast because we have an activity right around dinner time. I have to feed the boys before and need it to go down without any complaining. If you don’t have the time to make pizza dough, I use this naan flatbread which is fast and a great chewy texture for pizza dough. The best part is you can really customize and add any toppings you like and the whole meal takes about 15-20 minutes in total from start to sitting down at the table and eating. Pizza has kind of become a staple meal around here. If I ask the boys what they want on any given night for dinner they will yell “PIZZA”!!!!! So my theory is.. give them what they want..with a twist. Their pizza of choice.. that they never get sick of is; pepperoni and cheese with pineapple. I ALWAYS serve their pizza, whether homemade or take-out, with a pile of fresh veggie sticks on the side. This meal has definitely been a hit!

Ingredients Pizza 1:

  • Naan Flatbread
  • Tomato Sauce
  • Vegan sausage
  • Pineapple chunks
  • Mozzarella Cheese

Ingredients Pizza 2:

  • Naan Flatbread
  • Tomato Sauce
  • 1 tsp dried Oregano
  • Vegan Sausage
  • Pineapple chunks
  • sun-dried Tomatoes
  • Fresh Spinach
  • Mozzarella Cheese
  • 1 Tbsp Pumpkin Seeds

Flatbread Pizza

Directions:

  1. Preheat Oven to broil or 550 degrees.
  2. Heat a cast iron or pan over medium heat and add 1 Tbsp of coconut oil to pan. Cut up 1 1/2 vegan sausage into small round pieces and put on pan. Cook sausage for 3-5 minutes each side, until each side is a crispy brown.
  3. Place Naan bread on a large baking sheet.
  4. Spread a thin layer of tomato sauce over each of the naan breads, spreading it out evenly.
  5. Then add whatever toppings you prefer, I did two different pizzas with different toppings. Put as much or as simple as you wish.
  6. Sprinkle the top with your desired amount of cheese.
  7. Place the baking sheet with pizzas in the middle of the oven for about 4 minutes, watching so that it does not burn.
  8. Serve hot!
