The reason why I exercise (besides overall health and stress relief) 3-4.. sometimes 5 days a week, is to eat. I love food. Healthy, yummy, flavourful food. And this pesto is one of those foods.
I usually make pesto in the summer time when basil is in season. But now, since it is winter, I had been buying store-bought, and it just wasn’t cutting it. I looked around at a few different ideas and came up with this super easy kale pesto recipe. I couldn’t believe how delicious it came out!
This kale pesto is creamy and delicious with the perfect tang from the lemon juice and nutty flavour from the walnuts.
Makes: 1.5 Cups
- Medium bunch of kale (I used lacinato kale)
- 1/2 Cup Walnuts
- 3 Garlic Cloves
- 1/2 Cup Nutritional Yeast
- 1 Lemon -Juiced
- 1/4 Cup Olive Oil
- Salt and Pepper
- Wash and dry kale.
- Add Kale and all other ingredients to food processor, seasoning with salt and pepper.
- Process. Scrape down sides with spatula and process once more until smooth. Taste and adjust seasoning to your preference.
This Pesto is best enjoyed fresh, but can be put in freezer in a plastic container or freezer bag.
